Indulge in the timeless elegance of a classic Caesar Salad, a culinary masterpiece known for its crisp romaine lettuce, crunchy croutons, and a dressing that is both creamy and tangy. This recipe guides you through creating a homemade Caesar dressing that elevates the salad to an unforgettable experience.


Ingredients

  • 1 large head romaine lettuce, washed and dried
  • 1 cup homemade croutons (recipe below)
  • 1/4 cup freshly grated Parmesan cheese, plus extra for garnish
  • For the Homemade Caesar Dressing:
  • 1 large egg yolk
  • 1 clove garlic, minced
  • 1 tsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • 1/2 tsp Worcestershire sauce
  • 1/4 cup extra virgin olive oil
  • 2 tbsp grated Parmesan cheese
  • Pinch of salt and freshly ground black pepper


Instructions

  1. For the Homemade Caesar Dressing:
  2. In a small bowl, whisk together the egg yolk, minced garlic, Dijon mustard, lemon juice, and Worcestershire sauce until well combined.
  3. Slowly drizzle in the extra virgin olive oil while continuously whisking until the dressing emulsifies and thickens.
  4. Stir in the grated Parmesan cheese, salt, and pepper. Taste and adjust seasonings as needed.
  5. For the Salad:
  6. Tear or chop the romaine lettuce into bite-sized pieces and place in a large mixing bowl.
  7. Add the homemade croutons and 1/4 cup of grated Parmesan cheese to the lettuce.
  8. Pour the desired amount of Caesar dressing over the salad.
  9. Toss gently until all the lettuce, croutons, and cheese are evenly coated with the dressing.
  10. Serve immediately, garnished with extra grated Parmesan cheese.
  11. For the Homemade Croutons:
  12. Preheat oven to 375°F (190°C).
  13. Cut 2 slices of day-old bread (sourdough or ciabatta work well) into 1/2-inch cubes.
  14. Toss the bread cubes with 1 tablespoon of olive oil, a pinch of salt, and a pinch of garlic powder on a baking sheet.
  15. Bake for 8-10 minutes, or until golden brown and crispy, tossing halfway through. Let cool.

Notes

  • For a safer dressing, you can use pasteurized egg yolk or omit the egg yolk entirely and use mayonnaise as a base (though the texture will be slightly different).
  • Adjust the amount of garlic, lemon juice, and Worcestershire sauce in the dressing to suit your taste.
  • Freshly grated Parmesan cheese makes a significant difference in flavor compared to pre-grated varieties.
