Ingredients
  

Dry Ingredients
  • 1 cup rolled oats
  • 1 cup all-purpose flour Can substitute half with whole wheat flour.
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon Feel free to add more or mix with nutmeg.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
Fruits
  • 1 cup diced apples Fresh or dried apples can be used.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
  4. Beat in the egg and vanilla extract until well combined.
  5. In another bowl, whisk together the rolled oats, all-purpose flour, ground cinnamon, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  7. Gently fold in the diced apples.
  8. Using a tablespoon or cookie scoop, drop the dough onto your prepared baking sheet, leaving space between each spoonful.
Baking
  1. Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly golden.
  2. Remove from the oven and allow cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze for 2-3 months, thaw at room temperature or microwave for 15-20 seconds before serving.
