Preparation
- Preheat the oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the rolled oats, all-purpose flour, ground cinnamon, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until combined.
- Gently fold in the diced apples.
- Using a tablespoon or cookie scoop, drop the dough onto your prepared baking sheet, leaving space between each spoonful.
Baking
- Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and allow cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. Freeze for 2-3 months, thaw at room temperature or microwave for 15-20 seconds before serving.
