- Preheat your oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas until smooth and creamy.
- Add in the melted butter, sugar, and brown sugar, stirring until well-combined.
- Mix in the egg and vanilla extract.
- In another bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
- Gradually incorporate the dry ingredients into the wet mixture.
- Lightly grease a baking dish to prevent sticking.
- Spread the batter into the prepared baking dish and flatten evenly.
- In a small bowl, combine cinnamon and sugar, and sprinkle evenly atop the batter, along with the chopped nuts if using.
- Carefully roll the batter from one end, keeping it tight, and slice it into 1-inch pieces.
- Arrange the slices in the baking dish and bake for about 25 minutes or until golden brown.
- Serve warm, optionally drizzled with a simple icing made from powdered sugar and milk.
