  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Method
 

Preparation
  1. Dice the chicken breast into bite-sized pieces and chop your mixed vegetables.
  2. Place a large skillet over medium heat and add the olive oil. Let it heat up until shimmering.
Cooking
  1. Add the diced chicken to the skillet, seasoning it with salt, pepper, garlic powder, and onion powder. Cook for about 5-7 minutes, stirring occasionally until the chicken is golden and cooked through.
  2. Once the chicken is nearly done, toss in the mixed vegetables. Cook for an additional 5-7 minutes, stirring frequently until the veggies are tender yet crisp.
Finishing Touches
  1. If desired, garnish with fresh herbs to brighten up the flavors. Serve hot directly from the skillet.

Notes

For a vegetarian option, replace the chicken with cubed tofu. Make sure not to overcrowd the skillet when cooking.
