Preparation
- Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Stir the melted butter into the mashed bananas.
- Mix in the baking soda and salt.
- Stir in the sugar, beaten egg, and vanilla extract.
- Mix in the flour until just incorporated.
- In a small bowl, mix the cinnamon with a few tablespoons of the batter.
- Pour half of the plain batter into the prepared loaf pan, followed by half of the cinnamon mixture.
- Add the remaining plain batter and top with the rest of the cinnamon mixture.
- Use a knife to swirl the cinnamon batter into the plain batter.
- If using, sprinkle chopped walnuts on top.
Baking
- Bake in the preheated oven for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for a few minutes before transferring to a wire rack.
Notes
Cinnamon Swirl Banana Bread can be served plain, with butter, or toasted. It can be stored tightly wrapped at room temperature for 2-3 days, or in the refrigerator or freezer for longer storage. Make sure to thaw and reheat if freezing.
