  • 3 pieces ripe bananas Make sure they are very ripe for the best flavor.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt Balances the flavors.
  • 3/4 cup sugar Sweetens the loaf.
  • 1 large egg beaten Binds the ingredients.
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Forms the base.
  • 1 teaspoon ground cinnamon Provides the signature swirl.
  • 1/2 cup chopped walnuts Optional, adds a delightful crunch.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the baking soda and salt.
  5. Stir in the sugar, beaten egg, and vanilla extract.
  6. Mix in the flour until just incorporated.
  7. In a small bowl, mix the cinnamon with a few tablespoons of the batter.
  8. Pour half of the plain batter into the prepared loaf pan, followed by half of the cinnamon mixture.
  9. Add the remaining plain batter and top with the rest of the cinnamon mixture.
  10. Use a knife to swirl the cinnamon batter into the plain batter.
  11. If using, sprinkle chopped walnuts on top.
Baking
  1. Bake in the preheated oven for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let cool in the pan for a few minutes before transferring to a wire rack.

Notes

Cinnamon Swirl Banana Bread can be served plain, with butter, or toasted. It can be stored tightly wrapped at room temperature for 2-3 days, or in the refrigerator or freezer for longer storage. Make sure to thaw and reheat if freezing.
