Preparation
- Preheat the oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
- In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
- Mix in the sugar, egg, and vanilla extract.
- Sprinkle the baking soda and salt over the mixture and mix in.
- Add the flour and mix until just combined.
Cinnamon Swirling
- In a small bowl, mix the cinnamon and brown sugar together.
- Pour half of the banana bread batter into the prepared pan, sprinkle half of the cinnamon sugar mixture over it, then pour the remaining batter on top.
- Swirl the batter using a knife to create a cinnamon swirl.
- Sprinkle the remaining cinnamon sugar on top.
Baking
- Bake for 60-65 minutes or until a toothpick comes out clean.
- Let it cool before slicing and serving.
Notes
To store, keep in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. Let cool completely before wrapping. You can add nuts or chocolate chips for extra texture.
