Preparation
  1. Heat olive oil in a skillet over medium-high heat.
  2. Brown the beef cubes on all sides and transfer them to the crock pot.
  3. Add carrots, potatoes, onion, and garlic to the crock pot.
  4. Pour in the beef broth and add Worcestershire sauce, thyme, salt, and pepper.
  5. Stir to combine all the ingredients.
  6. Cover and cook on low for 7-8 hours or high for 4-5 hours, until the beef is tender.
Serving
  1. Serve this beef stew hot with some crusty bread on the side for dipping.
  2. It also pairs wonderfully with a fresh garden salad.

Notes

For extra depth of flavor, consider adding a splash of red wine to the broth. Feel free to toss in other vegetables like green beans or peas for variety. Adjust the seasoning to your taste; sometimes a little more thyme or pepper can enhance the flavor.
