  • 1 package tortellini (fresh or frozen)
  • 2 cups heavy cream
  • 2 cups chicken broth Use Halal or vegetable broth for vegetarian option.
  • 1 cup grated Parmesan cheese Adjust to taste.
  • 1 cup spinach (fresh or frozen) If using frozen, separate before adding.
  • 1 teaspoon garlic powder
  • to taste salt and pepper Season to preference.

Method
 

Preparation
  1. Gather all your ingredients and measure them out.
  2. Plug in your crockpot and set it on low heat for a longer cooking time or high for about 30 minutes.
  3. In the crockpot, pour in the chicken broth, heavy cream, and garlic powder. Stir gently until combined.
  4. Toss in the package of tortellini, ensuring each piece is submerged in the creamy mixture.
  5. Add the spinach and mix well. If using frozen spinach, separate it before adding.
  6. Season with salt and pepper to taste.
Cooking
  1. Cover and let it cook! If on low, simmer for about 1 hour. If on high, cook for about 30 minutes.
Finishing
  1. When the tortellini are tender, stir in the grated Parmesan cheese until melted and incorporated. Taste for seasoning adjustments.
  2. Ladle the creamy tortellini into bowls and add any additional toppings you like.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to a month. To reheat, add a splash of chicken broth or cream in a saucepan over low heat until heated through.
