- Fold in chocolate chips or blueberries if desired.
Cooking
- Heat a non-stick skillet over medium heat and lightly grease it with butter or oil.
- Scoop the batter onto the skillet using a tablespoon, leaving about 2 inches between each.
- Cook for 2-3 minutes or until bubbles form on the top and edges look set.
- Carefully flip each popper and cook for an additional 1-2 minutes until golden brown.
- Transfer to a serving plate and serve with syrup or powdered sugar.
Notes
You can substitute whole wheat flour for a healthier version or oat flour for a gluten-free option. Add a dash of cinnamon or nutmeg for extra flavor. Keep cooked poppers warm in a low oven if making a larger batch.
