Preparation
- Preheat your oven to 350°F (180°C). Grease a 9x13 inch baking pan and set it aside.
- In a large bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Mix well until evenly distributed.
- In a separate bowl, whisk together the melted butter, milk, and egg until frothy.
- Pour the wet ingredients into the dry mixture. Stir gently until just combined to form a batter. Do not overmix!
- In a small bowl, mix the ground cinnamon and brown sugar. Spread half of the batter into the prepared baking pan, sprinkle the cinnamon-sugar evenly over the batter, then top with the remaining batter.
Baking
- Bake in the preheated oven for around 25-30 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
Glazing
- While the bars are baking, prepare the glaze by combining the powdered sugar, milk, and vanilla extract in a small bowl. Mix until smooth.
- Once the bars are baked, allow them to cool slightly before drizzling the glaze over the top.
Notes
For a healthier option, substitute half the all-purpose flour with whole wheat flour or use coconut sugar instead of granulated sugar. Keep an eye on cooking time and avoid overmixing the batter to maintain a light texture. Store in an airtight container for up to 5 days or freeze for up to three months.
