- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and 1 cup of powdered sugar until light and fluffy, about 2-3 minutes.
- Stir in 1 teaspoon of vanilla extract and mix well.
- Gradually add 2 cups of all-purpose flour and mix until no dry flour remains; the dough will be soft and a bit crumbly.
- Fold in 1 cup of chopped nuts.
- Scoop out tablespoon-sized amounts of dough and roll into small balls, placing them on an ungreased baking sheet.
- Bake in the preheated oven for 12-15 minutes, or until set but not browned.
- Let the cookies cool for a few minutes, then roll in additional powdered sugar until completely coated.
- Allow cookies to cool on a wire rack before serving.
Notes
For nut allergies, skip the nuts or use dried fruits. Timing is key—do not overbake. Chill the dough for easier handling if too soft.
