  • 1 cup butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup chopped nuts (such as walnuts or pecans) Can be substituted with dried fruits for nut-free version.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the softened butter and 1 cup of powdered sugar until light and fluffy, about 2-3 minutes.
  3. Stir in 1 teaspoon of vanilla extract and mix well.
  4. Gradually add 2 cups of all-purpose flour and mix until no dry flour remains; the dough will be soft and a bit crumbly.
  5. Fold in 1 cup of chopped nuts.
  6. Scoop out tablespoon-sized amounts of dough and roll into small balls, placing them on an ungreased baking sheet.
  7. Bake in the preheated oven for 12-15 minutes, or until set but not browned.
  8. Let the cookies cool for a few minutes, then roll in additional powdered sugar until completely coated.
  9. Allow cookies to cool on a wire rack before serving.

Notes

For nut allergies, skip the nuts or use dried fruits. Timing is key—do not overbake. Chill the dough for easier handling if too soft.
