Preparation
- Preheat your oven to 350°F (175°C).
- Prepare the sweet potatoes by cooking them until soft and mashing them until smooth.
- In a large mixing bowl, combine the mashed sweet potatoes, vegetable oil, sugar, eggs, and vanilla extract. Whisk until smooth.
- In a separate bowl, whisk together all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Pour the batter into a greased loaf pan, smoothing it out evenly.
Baking
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to 3 days. Can freeze for up to three months.
