Wet Ingredients
  • 2 cups cooked mashed sweet potatoes Cook until soft and mash until smooth.
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare the sweet potatoes by cooking them until soft and mashing them until smooth.
  3. In a large mixing bowl, combine the mashed sweet potatoes, vegetable oil, sugar, eggs, and vanilla extract. Whisk until smooth.
  4. In a separate bowl, whisk together all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. Pour the batter into a greased loaf pan, smoothing it out evenly.
Baking
  1. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 3 days. Can freeze for up to three months.
