  • 1 teaspoon vanilla extract

  • 1 tablespoon ground cinnamon
  • 2 tablespoons brown sugar for the swirl

Preparation
  1. In a large mixing bowl, whisk together all-purpose flour, brown sugar, baking powder, and salt.
  2. In a separate bowl, mix together milk, egg, melted butter, and vanilla extract until blended.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  4. In a small bowl, combine ground cinnamon with brown sugar for the swirl.
Cooking
  1. Heat a non-stick skillet or griddle over medium heat and lightly grease it.
  2. Pour about 1/4 cup of pancake batter onto the skillet, drizzle cinnamon swirl mixture over the batter, and swirl gently.
  3. Cook for 2-3 minutes until bubbles appear, then flip and cook for another 2-3 minutes until golden brown.
Serving

Notes

For a Halal-friendly alternative, substitute the egg with 1/4 cup unsweetened applesauce or a flaxseed mixture. Ensure your skillet temperature is right for perfect pancakes. If batter is too thick, add a splash of milk.
