- In a large bowl, combine the ground chicken, finely chopped onion, breadcrumbs, grated Parmesan cheese, egg, salt, and pepper. Mix until everything is just combined; don’t overwork it!
- With your hands, shape the mixture into meatballs, about 1-1.5 inches in diameter. You should have approximately 20-24 meatballs, depending on the size.
Cooking
- Heat a large skillet over medium heat and add a generous drizzle of olive oil. Once hot, place the meatballs in the skillet, making sure not to overcrowd them. Cook for 6-8 minutes, turning occasionally until they are golden brown and cooked through.
- As the meatballs nearly cook through, pour the cup of French onion soup over them, allowing the flavors to simmer together for a few minutes.
- Plate the meatballs, drizzle some of the onion soup over, and sprinkle with chopped parsley for a fresh touch.
