  • 1 cup French onion soup (ensure halal-certified)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 whole egg

Preparation
  1. In a large bowl, combine the ground chicken, finely chopped onion, breadcrumbs, grated Parmesan cheese, egg, salt, and pepper. Mix until everything is just combined; don’t overwork it!
  2. With your hands, shape the mixture into meatballs, about 1-1.5 inches in diameter. You should have approximately 20-24 meatballs, depending on the size.
Cooking
  1. Heat a large skillet over medium heat and add a generous drizzle of olive oil. Once hot, place the meatballs in the skillet, making sure not to overcrowd them. Cook for 6-8 minutes, turning occasionally until they are golden brown and cooked through.
  2. As the meatballs nearly cook through, pour the cup of French onion soup over them, allowing the flavors to simmer together for a few minutes.
  3. Plate the meatballs, drizzle some of the onion soup over, and sprinkle with chopped parsley for a fresh touch.
