Ingredients

For the marinade
  • 1/4 cup soy sauce Use low-sodium if desired
  • 2 tablespoons fresh ginger, grated
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
For the chicken
  • 4 pieces boneless chicken thighs Skinless preferred for healthier option
  • 1 bunch green onions, chopped For garnish
  • 1 tablespoon sesame seeds For garnish

Method

Preparation
  1. In a medium bowl, whisk together the soy sauce, grated ginger, honey, minced garlic, and sesame oil until well combined.
  2. Place the chicken thighs in a shallow dish and pour the marinade over them, ensuring each piece is well-coated. Let it marinate for at least 15-20 minutes (or even overnight in the fridge for more robust flavor).
Cooking
  1. In a large skillet, heat a little oil over medium-high heat. Once hot, add the marinated chicken thighs (discard the leftover marinade).
  2. Sear the chicken thighs for about 5-7 minutes on each side until golden brown and cooked through, ensuring the internal temperature reaches 165°F (75°C).
Serving
  1. Once the chicken is fully cooked, let it rest for a few minutes before slicing. Serve garnished with fresh green onions and a sprinkle of sesame seeds.
  2. Plate your ginger soy chicken with your favorite sides, and enjoy!

Notes

For substitutions, try using gluten-free soy sauce or swapping chicken thighs for chicken breasts. Make sure not to overcrowd the pan while cooking. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for longer storage.
