  • 2 packs instant ramen noodles
  • 4 cups chicken or vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 cup sliced vegetables (like bok choy, mushrooms, and carrots)
  • 2 pieces green onions, chopped
  • 2 pieces soft-boiled eggs (optional)

  1. Gather all your ingredients. Slice the vegetables and chop the green onions so everything is ready for action.
  2. Set your Instant Pot to the sauté function. Drizzle in the sesame oil and allow it to heat. Once warm, add your sliced vegetables and sauté for about 3-4 minutes until they start to soften.
  3. Pour in the chicken or vegetable broth and soy sauce. Stir to combine. Next, add your instant ramen noodles directly into the pot—don’t worry about them breaking!
  4. Close the lid, ensuring the valve is in the sealing position. Set your Instant Pot to manual mode for 4 minutes. The pot will take a few moments to come to pressure before cooking.
  5. Once the timer goes off, carefully perform a quick release of the pressure. When it’s safe to open the lid, do so and give the ramen a good stir.
  6. Divide the ramen into bowls. Top with chopped green onions and soft-boiled eggs if using. Enjoy your steaming bowl of goodness!

Notes

Feel free to customize with your favorite veggies or add tofu for extra protein. Timing in sautéing is crucial for flavor. Store leftovers separately for best texture.
