  • 2 cups all-purpose flour
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional) Optional for extra flavor
Wet Ingredients
  • 1/2 cup unsalted butter, melted Melted to combine easily
  • 1 cup milk Can substitute with almond milk for dairy-free
  • 2 large eggs
  • 1 teaspoon vanilla extract For added flavor
Fruits
  • 1 1/2 cups fresh or frozen cherries, pitted Ensure they're pitted to avoid bitterness

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Line a 12-cup muffin tin with muffin liners, or lightly grease each cup.
Mixing
  1. In a large mixing bowl, combine the flour, sugar, baking powder, salt, and cinnamon (if using).
  2. In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract until fully combined.
  3. Pour the wet ingredients into the dry ingredients and gently fold them together.
  4. Gently fold in the cherries.
Baking
  1. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
  2. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  3. Allow muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Store in an airtight container for up to three days or freeze for up to three months. Reheat in the microwave or oven for best taste.
