  • 2 cups key rolled oats Use gluten-free oats if needed.
  • 1 cup fresh strawberries, sliced Frozen strawberries can be used if thawed and drained.
  • 1/3 cup honey or maple syrup Use maple syrup for a vegan option.
  • 1/2 cup unsalted butter or coconut oil, melted Coconut oil can be used for a dairy-free option.
  • 1/4 tsp salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a large bowl, combine the rolled oats and salt. Add the melted butter or coconut oil and honey or maple syrup. Stir until well combined.
  3. Set aside 1 cup of the oat mixture for the topping.
  4. Press the remaining oat mixture into the bottom of the prepared pan to form the crust.
  5. Evenly distribute the sliced strawberries over the crust.
  6. Sprinkle the reserved oat mixture over the strawberries and press down lightly.
  7. Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
  8. Allow the bars to cool completely in the pan before slicing into squares.

Notes

These bars can be refrigerated for up to a week or frozen for up to three months. Thaw overnight in the fridge and warm in the microwave for best texture.
