Ingredients
  

For the Mahi Mahi
  • 4 fillets Mahi Mahi fillets (about 6 ounces each)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
For the Vegetables
  • 1 cup bell peppers, sliced (any color)
  • 1 cup asparagus, trimmed
  • 1 cup zucchini, sliced

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper to create a flavorful marinade.
  3. On a large sheet pan, add the sliced bell peppers, asparagus, and zucchini. Drizzle half of the marinade over the vegetables, then toss well to combine.
  4. Push the vegetables to the sides of the pan. Place the Mahi Mahi fillets in the center of the pan and brush the remaining marinade over the fish.
Cooking
  1. Place the sheet pan in the preheated oven, and roast for about 15-20 minutes, or until the fish flakes easily with a fork and the vegetables are tender.
  2. Remove the pan from the oven. Let it rest for a few minutes before serving.

Notes

Vegetable variety can be adjusted based on what's in season or available. Consider marinating the fish for at least 30 minutes before cooking for enhanced flavor. Leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
