Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine softened cream cheese and butter. Beat until smooth and creamy.

- Add the egg and vanilla extract, and mix until well combined.
- In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
- Fold in the chopped strawberries and white chocolate chips until evenly distributed.
- Drop dollops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Baking
- Bake for 12-14 minutes, or until the edges are lightly golden and the center is set.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
