Ingredients
  

Pasta and Meat Mixture
  • 8 oz pasta Any short pasta like penne or rotini
  • 1 lb ground beef (or turkey) Use ground turkey for a healthier option
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed Alternatively, use pinto beans
  • 1 cup corn, frozen or canned
  • 1 cup salsa
Toppings
  • 2 cups shredded cheese (cheddar or Mexican blend) Reserve half for topping
  • 1 cup diced tomatoes
  • 1/4 cup chopped green onions For garnish
  • Fresh cilantro, for garnish

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta according to package instructions, then drain.
  3. In a skillet, brown the ground beef over medium heat, breaking it into crumbles. Drain any excess fat.
  4. Stir in the taco seasoning, black beans, corn, and salsa.
  5. In a large mixing bowl, combine the cooked pasta with the meat mixture and half of the cheese.
Baking
  1. Spread the mixture into a greased baking dish.
  2. Top with diced tomatoes and the remaining cheese.
  3. Bake for 20-25 minutes, until the cheese is melted and bubbly.
Serving
  1. Garnish with green onions and cilantro before serving.

Notes

Serve with extra toppings like sour cream, jalapeños, or avocado. Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
