Ingredients
  

Main Ingredients
  • 1 lb ground beef Cook until browned
  • 1 packet taco seasoning Follow package instructions for preparation
  • 1 cup ranch dressing
  • 1 cup shredded cheddar cheese Divided into two portions
  • 1 bag tortilla chips For serving
  • 1 bunch chopped green onions For garnish

Method
 

Preparation
  1. In a skillet, cook the ground beef over medium heat until it is browned. Drain any excess fat.
  2. Stir in the taco seasoning and prepare according to the package instructions.
  3. In a bowl, mix the cooked beef with ranch dressing and half of the shredded cheddar cheese.
Assembly and Cooking
  1. Take individual tortilla chips and place a spoonful of the taco mixture on top of each chip.
  2. Sprinkle the remaining shredded cheese over the taco bites.
  3. Place the chips on a baking sheet and broil them in the oven for 3-5 minutes until the cheese has melted.
  4. Garnish the bites with chopped green onions before serving.

Notes

These bites can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in the oven or microwave but be aware the chips may lose their crunch. Customize fillings with black beans or corn, or use ground turkey or chicken.
