Preparation
- In a skillet, cook the ground beef over medium heat until it is browned. Drain any excess fat.
- Stir in the taco seasoning and prepare according to the package instructions.
- In a bowl, mix the cooked beef with ranch dressing and half of the shredded cheddar cheese.
Assembly and Cooking
- Take individual tortilla chips and place a spoonful of the taco mixture on top of each chip.
- Sprinkle the remaining shredded cheese over the taco bites.
- Place the chips on a baking sheet and broil them in the oven for 3-5 minutes until the cheese has melted.
- Garnish the bites with chopped green onions before serving.
Notes
These bites can be stored in an airtight container in the refrigerator for up to 2 days. Reheat in the oven or microwave but be aware the chips may lose their crunch. Customize fillings with black beans or corn, or use ground turkey or chicken.
