Main Ingredients
  • 1 pound ground beef (be sure it’s Halal)
  • 1 packet taco seasoning (check that it contains no forbidden ingredients)
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 2 cups tortilla chips For layering
  • 2 cups shredded cheddar cheese For topping
  • 1 cup salsa
  • 1/2 cup sour cream For serving
  • To taste Chopped lettuce and diced tomatoes for topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it up as you cook.
  3. Add taco seasoning to the cooked beef and stir well. Allow to simmer for about 5 minutes.
  4. In a large mixing bowl, combine the seasoned beef, drained black beans, corn, and salsa. Stir until well mixed.
  5. In a greased casserole dish, layer tortilla chips, followed by the beef mixture, and then top with shredded cheddar cheese.
Baking
  1. Place the casserole in the preheated oven and bake for 30 minutes, or until the cheese is melted and bubbly.
  2. Once done, remove from the oven and let cool slightly. Top with chopped lettuce, diced tomatoes, and a dollop of sour cream before serving.

Notes

For meat alternatives, use ground chicken or turkey for a lighter option. If preparing ahead, layer in the dish, refrigerate, and then bake when ready. Customize toppings with jalapeños, olives, or avocado.
