Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef until fully cooked, breaking it up as you cook.
- Add taco seasoning to the cooked beef and stir well. Allow to simmer for about 5 minutes.
- In a large mixing bowl, combine the seasoned beef, drained black beans, corn, and salsa. Stir until well mixed.
- In a greased casserole dish, layer tortilla chips, followed by the beef mixture, and then top with shredded cheddar cheese.
Baking
- Place the casserole in the preheated oven and bake for 30 minutes, or until the cheese is melted and bubbly.
- Once done, remove from the oven and let cool slightly. Top with chopped lettuce, diced tomatoes, and a dollop of sour cream before serving.
Notes
For meat alternatives, use ground chicken or turkey for a lighter option. If preparing ahead, layer in the dish, refrigerate, and then bake when ready. Customize toppings with jalapeños, olives, or avocado.
